So Hungry, Pinterest to the Rescue

I don’t know about the rest of you, but outside of planning an event like Ella’s first birthday party, Pinterest is all about recipes. It’s like food porn for hungry pregnant women. I don’t go onto Pinterest often, but if I am waiting for my appointment to start, or find myself awake in the middle of the night, it’s a go to.

The thing about sites like this rather than or which are go-tos for me, there are no ratings. This has led to some, not so great meals and snacks. I thought I’d share a few recipes that turned out to be a big hit at my house:

Chipotle BBQ Pork with Mango and Broccoli Slaw

Who doesn’t love meals that involve the crockpot? So nice to come home to a meal that is almost ready. Note: Definitely make the slaw a little bit ahead of time to let the flavors marinade. I also added some salt and pepper.

Turkey Quinoa Chili


I am on a quest to find the ultimate family pleasing chili recipe. This one came fairly close and was packed with protein. We ate it up.

Penne Rosa

Remember how I said I’m on a tomato-based foods kick? A few weeks back I was craving creamy tomato sauce. Pinterest to the rescue. I didn’t add the shrimp because it’s a texture problem for me, but it was excellent without it. I also was a little heavy handed on the garlic and spinach. Grilled chicken is a nice protein addition!

Baked Quinoa Broccoli Casserole

Growing up I ate chicken and rice casserole more times that I can count. I’m pretty sure we had it once a week which was fine with me because I always loved it. I had an abundance of broccoli and quinoa in the house when I stumbled upon this one. I added some diced chicken breast to it and everyone loved it. You could substitute greek yogurt for the mayo, but come on, a little mayo here and there won’t kill ya.

Not meals but yummy sides:

Spaghetti Squash Au Gratin

I’m all about cheesy goodness, it’s no wonder I love au gratin potatoes. This recipe takes all the good about potatoes but makes it a little bit healthier by replacing potatoes with squash.

Mango Lime Salsa

So fresh, so summery and so tasty. I served this with chipotle chicken tacos. Ella and Josh polished it off in no time.

Crockpot Bacon Bourbon Baked Beans

I made this last year for a BBQ we had. HUGE hit. I used to hate baked beans, or really beans of any kind, but these are enough to turn anyone into a baked bean lover.

  1. Those all look super delicious! I am definitely going to try the quinoa broccoli bake. Mark hated quinoa the last time he tried it but I think I could sneak it that way.

    Last night, I had a delicious dinner – frozen fries (baked, obv) with cheese, sliced turkey dog and ranch. Let’s just say I haven’t been so hot at planning and thus have no good suggestions.
